ENOTIMATIC is a new, efficient, cost-effective and practical technology
that increases shelf life, stability, taste pleasantness, salubrity
and nutraceutical value of beverages through controlled and parametrized
infusion of wood fragments, or of other vegetal derivation. The installation
possesses an advanced automation system that can be managed through
a touch-screen panel, which in turn allows to transfer to the infusion
liquid the most interesting compounds such as tannins, polysaccharides,
aromatic compounds. The wanted results are achieved efficiently, cost-effectively
and may be reproduced, and all this with high yield and purity.
The versatility of ENOTIMATIC technology is what makes it effective,
in addition to the traditional oak infusion, also in the processing
of beverages based on wine or spirits, which can be enriched with vegetal
matrices of various kinds: fruit, woody seeds, berries, woody or herbaceous
essences, with the purpose of extracting compounds of nutraceutical
interest.
